The current FDA Food Code sets the danger zone at 41°F to 135°F, and that is what accredited course tests use. The 40°F to 140°F range you may have seen is USDA guidance written for home kitchens, and 45°F to 140°F appears in older editions of the code — both are common wrong-answer traps. When a question offers several similar ranges, the retail food answer is 41°F to 135°F.
Are these the same temperatures my state tests?
Almost certainly. Nearly every US state adopts the FDA Food Code in some version, and every number in this drill comes from the current code. A few jurisdictions still operate on older editions with legacy figures — 45°F cold holding, for example — so if your approved course teaches a different number, answer with the course’s number on its test, and treat the figures here as the current national standard.
